Sweet Potato Pizza Crust

 

 

Makes 2 large pizza bases

 

 

Ingredients:

  • 2-3 medium sweet potatoes, uncooked and peeled
  • 1 cup quick oats (or almond meal for gluten free)
  • 2 tablespoon grated Parmesan cheese (or leave out for dairy free)
  • 1 egg (or 1 teaspoon baking powder with 2 tablespoon water for egg fee).

 

 

Instructions:

  1. Preheat oven to 180 degrees.
  2. Place Sweet potato and oats in food processor. Pulse until the sweet potato very fine (like sea salt texture).
  3. Add the egg, parmesan and seasoning; pulse again to combine. The mixture should resemble a loose/rough dough.
  4. Transfer mixture to a lined and greased baking sheet in pizza pan. Use hands to press mixture flat. Crusts should be about 1- 1/2 cm thick.
  5. Bake for 25-30 minutes, until the top is dry to the touch. Remove from oven and add your favourite pizza toppings and return back to the oven. Bake for another 10 minutes. 
  6. To serve: allow to cool slight for a few minutes before peeling off the baking sheet.
