Makes 2 large pizza bases
Ingredients:
- 2-3 medium sweet potatoes, uncooked and peeled
 - 1 cup quick oats (or almond meal for gluten free)
 - 2 tablespoon grated Parmesan cheese (or leave out for dairy free)
 - 1 egg (or 1 teaspoon baking powder with 2 tablespoon water for egg fee).
 
Instructions:
- Preheat oven to 180 degrees.
 - Place Sweet potato and oats in food processor. Pulse until the sweet potato very fine (like sea salt texture).
 - Add the egg, parmesan and seasoning; pulse again to combine. The mixture should resemble a loose/rough dough.
 - Transfer mixture to a lined and greased baking sheet in pizza pan. Use hands to press mixture flat. Crusts should be about 1- 1/2 cm thick.
 - Bake for 25-30 minutes, until the top is dry to the touch. Remove from oven and add your favourite pizza toppings and return back to the oven. Bake for another 10 minutes.
 - To serve: allow to cool slight for a few minutes before peeling off the baking sheet.
