Kids will enjoy these cute tots as they are easy to handle and perfect for dipping. Make them the night before and pack 3-4 in their lunch boxes for a wholesome snack/meal. These tot are also perfect for babies learning to eat finger foods!
I baked these tots in a mini muffin tray but you can also spoon them into small balls onto an oven tray.
Ingredients:
- 2 medium zucchinis
- Baby spinach, 2 handfuls
- 3 eggs
- 1/2 cup cottage cheese
- 3 tablespoon flour of choice
- 1 teaspoon baking powder
- salt and pepper, to taste
Method:
- Preheat oven to 180°C. Spray mini muffin tray with cooking spray or line baking paper on oven tray.
- Grate the zucchini and squeeze out excess water.
- Finely chop the baby spinach.
- In a medium bowl, combine all of the ingredients together.
- Spoon 1 tablespoon of mixture into muffin holes or spoon onto the oven tray to make small balls.
- Bake for 15 to 20 minutes.
- Serve warm or cold with plain yoghurt dip.
