This creamy cauliflower sauce is a hit! Perfect for pasta, pizza, or anything else you might want to cover in creamy deliciousness.It also allows kids to try cauliflower when they might otherwise be reluctant to try chunks of it.
Here, I've added the sauce to pasta with chicken and mushroom.
Ingredients:
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups cauliflower florets
- 4 cups vegetable stock or water
- 1 cup milk of choice
- ¼ cup parmesan cheese
- Salt and pepper, to taste
Method:
- Saute the minced garlic with oil in a fry pan over low heat. Cook for a few minutes or until the garlic is soft. Remove from heat and set aside.
- Bring the water or vegetable broth to a boil in a large pot. Add the cauliflower and cook, covered, for 7-10 minutes or until cauliflower is tender. Do not drain.
- Transfer cauliflower with 1 cup of the cooking stock/water in a large deep bowl, sauted garlic, salt, pepper, milk and cheese. Blend in a food processor/blender stick for several minutes until the sauce is very smooth, adding more broth or milk depending on how thick you want the sauce. Serve hot over pasta or as a pizza sauce base.
